Boston Cream Donuts

Boston Cream Donuts

Introduction

Boston Cream Donuts are a heavenly treat that brings together three perfect elements: soft, fluffy yeast donuts, smooth vanilla custard filling, and a shiny chocolate glaze on top. Inspired by the classic Boston Cream Pie, these donuts are a delightful balance of light pastry, creamy filling, and rich chocolate. They may take a bit of time, but the result is a bakery-style indulgence you can proudly make at home.

Ingredients

For the Donut Dough

  • 3 1/2 cups all-purpose flour

  • 1/4 cup sugar

  • 2 1/4 teaspoons active dry yeast (1 packet)

  • 3/4 cup warm milk (about 110°F / 43°C)

  • 1/4 cup unsalted butter, softened

  • 2 large eggs

  • 1/2 teaspoon salt

  • Oil for frying (vegetable or canola)

For the Custard Filling

  • 2 cups whole milk

  • 1/2 cup sugar

  • 4 large egg yolks

  • 1/4 cup cornstarch

  • 2 tablespoons unsalted butter

  • 2 teaspoons pure vanilla extract

For the Chocolate Glaze

  • 1 cup semi-sweet chocolate chips (or chopped chocolate)

  • 1/2 cup heavy cream

  • 1 tablespoon butter

Instructions

Step 1: Make the Dough

  1. Dissolve yeast in warm milk with 1 teaspoon sugar. Let sit for 5–10 minutes until foamy.

  2. In a large bowl, combine flour, sugar, salt, eggs, butter, and yeast mixture. Knead until smooth and elastic (8–10 minutes by hand or 5 minutes with a stand mixer).

  3. Cover and let rise in a warm place for 1–2 hours, until doubled in size.

Step 2: Shape and Fry

  1. Punch down the dough, roll to about 1/2 inch thickness.

  2. Cut out rounds with a cutter, place on a tray, cover, and let rise for 30–40 minutes.

  3. Heat oil to 350°F (175°C). Fry donuts in batches for 1–2 minutes per side, until golden. Drain on paper towels.

Step 3: Make the Custard Filling

  1. Heat milk in a saucepan until steaming.

  2. In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly add the hot milk while whisking.

  3. Return mixture to saucepan and cook over medium heat until thick.

  4. Remove from heat, stir in butter and vanilla. Chill until set.

Step 4: Prepare the Chocolate Glaze

  1. Heat heavy cream until hot (do not boil).

  2. Pour over chocolate and butter, let sit 1–2 minutes, then stir until smooth and glossy.

Step 5: Assemble

  1. Fill a piping bag with custard. Poke a small hole in each donut and pipe custard inside.

  2. Dip the tops into the chocolate glaze, let excess drip off.

  3. Place on a wire rack until the glaze sets.

Conclusion

Boston Cream Donuts are a decadent combination of airy pastry, creamy custard, and rich chocolate. They may require patience, but the reward is absolutely worth it. Perfect for breakfast, dessert, or sharing with friends, these donuts are guaranteed to impress and satisfy every sweet tooth.
